time flies when.. you are knee deep in samples!

what a busy week i had. coming up we have our sample sale going on which means i've had to sort through closets of clothing and figure out what is ready to be sold, donated, destroyed or sent back to the vendor. and 18 24"x24"x24" later i am alllll done.



this past weekend i got to go on a little "stay-cation" for a friend who is getting hitched next weekend. God has truly blessed me with some new friendships here in my new city so it has been so nice getting to know these girls.



on friday pre-beach weekend, i got a lot of house maintenance done. i, thick hair, scrubbed my front porch [wearing my fun pink rubber gloves!] on my hands and knees, then disinfected the valet trash service trash can, swept the floors, mopped the floors, scrubbed the front door, cleaned out my kitchen cabinets, my fridge shelves and sorted through the crafting drawers. i felt very accomplished.


i also made this yummy cupcakes::



Pink Lemonade with Lemon Buttercream icing!

Ingredients:
1 box white cake mix
9oz thawed pink lemonade concentrate
3 egg whites
1/4 cup vegetable oil

Preheat oven to 350 F. Line muffin pan with liners.
In a large bowl, whisk together cake mix, oil, egg whites and lemonade concentrate. Add enough food coloring to turn it the shade of pink you like!

Scoop batter into liners (fill about three-fourths full). Bake in preheated oven for 20-25 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack. Top cooled cupcakes with frosting (see below).
Lemonade Buttercream:
3 c. + 3 Tbsp. confectioner’s sugar
1 stick unsalted butter at room temperature
1/8 tsp. salt
2 Tbsp. Lemon Juice

Red food coloring
Add the butter, confectioner’s sugar, salt, lemon juice, and a few drops of food coloring to the stand mixer and mix on low using the paddle attachment until combined. Turn the speed to med-high until the buttercream is fluffy and uniformly pink. Pipe or spread onto cooled cupcakes.


they were so good. i even went as far as to zest the lemon's and put the peel on top. [sidenote, the icing was close to being too buttery, may look for alternate icing in the future.. they will definitely reappear]

beach weekend was delightful. got some sun, made strawberry daquiris [1 part ice, 1 part strawberries, 1 part splenda, ? part coconut rum], and watched college football for a while. we went to a fun restaurant on the intercoastal, had calamari, cheese artichoke fondue & champage, drove the convertible down the beach for a little. it was lovely.


this week is going to be very busy too. my buyer is at market, which means i am kind of in charge of my department! eek! should be a good learning experience. then back to alma matter for the first night game of the season!
